Title: Cashew-Fudge Tarts

6tbSugar
1 1/2cButter; softened
FILLING
14ozSweetened condensed milk
1 Eggs
1tbWater; hot
1tsInstant coffee granules
6ozChocolate chips; melted
2tbAlour
1tsExtract, vanilla
1/4tsBaking powder
1cCashews, dry roasted; chopped
TOPPING
1/2cCashews, dry roasted; chopped

Pastry: combine flour and sugar in medium bowl. Using pastry blender or 2 knives, cut in butter until mixture resembles coarse meal. Knead in bowl until soft dough forms. Using 1/2 tablespoon of dough for each ball, shape dough into balls. Press balls of dough into bottoms and up sides of greased miniature muffin pans.

Preheat oven to 350 F. Filling: whisk milk and egg together in medium bowl. In small bowl, combine water and coffee; stir until coffee is dissolved. Add coffee mixture and next 4 ingredients to milk mixture; beat with electric mixer until smooth. Stir in cashews. Spoon about 1 tablespoon filling into each pastry shell. Sprinkle remaining cashews evenly over filling. Bake 25-30 minutes, until set in center. Cool in pans 10 minutes. Transfer to wire rack to cool completely. Store in airtight container.
